My father who retired to living in Ouveillan treated me to a visit to the small and picturesque village of Fontjoncouse, and introduced me to the exceptional restaurant of L'Auberge du Vieux Puits, run by the amiable Gilles Goujon and Marie Christine.
Gilles' cooking is superb, and is created with panache and creativity. Each course is brought out with showmanship - the waiting staff lift silver covers with aplomb, to the applaud of those at table.
\ The decoration of the restaurant is modern and full of art and sculpture, with color and light. making one feel somewhere else rather than in a village deep in the Corbières. Gilles makes us aware that the art of cooking fine French food is to be found all over France.
If you want to visit this restaurant book days, perhaps weeks in advance. Clients come great distances to enjoy the distinct cuisine - the menu is from 120 euros to more than 195 euros per person. The cheese tray boasts 35 cheeses, and more than this number of tastes is recipricoted in each meal.
