One of the best Minervois restaurants
This
charming restaurant, where one can eat outside under the cool shade
of trees, in what was once the village school, is well worth visiting
again and again.
Mylène and Christophe, have created a distinctive
ambience, where food is both pleasure and art. I was particularly impressed
by a cold mussel based gazpacho soup, which soothed the heat of the
cicadas panting in the summer's heat
"We think the Auberge St Martin at Beaufort
is a very special place. When we are at our holiday apartment near
there
we visit regularly every week for lunch and always take visitors
there for an evening meal. Myleen is a wonderful
front of house and her husband Christophe is a fantastic chef. In
the summer he cooks over a wood fire outside
and the food is wonderful. Their menu changes every day for lunch
and at 15 euro's last year was excellent value and that includes a
glass of wine. Bon Appetit!"

Directions:
From Carcassonne, take the D 610 (via Trebes and Puicheric). After
33 kms take a left at the village of Homps, on the D 910 through the
town of Olonzac. Through Olonzac, continue on the D910 for 3 kms to
the village of Beaufort. The restaurant is on the left hand side of
the road, in front of the church.
